Lot of natural light, plants and and earthy tones set the mood in the Pronghorn Resort’s brand new Huntington Lodge.

There’s a darling bar in the lobby, The Coyote, and they serve damn tasty (and pretty!) cocktails here!
The Ginger Berry: Crater Lake Gin + Fresh Ginger + Mint + Lime Juice + Berry Kombucha
The Huntington: Hendrick’s Gin + Grand Marnier + Lime Juice + Angostura Bitters + Orange Bitters + Agave, garnished with a Juniper Sprig
Super comfy beds and spacious, luxurious rooms await at the Pronghorn Resort! We stayed in their brand new Huntington Lodge and loved it.
Rooms with full kitchens are available if you want to cook at home on your vacay! Rooms are also equipped with fireplaces and super cozy robes!
Rooms in the brand new Huntington Lodge have private balconies and panoramic views of the Cascade Mountains! We loved sipping wine here in the evenings and coffee here in the mornings.
We started each day with fresh fruits smoothies at Trailhead, one of three restaurants on site.
Smoked Salmon Florentine: two eggs poached, smoked salmon, spinach, tomato, and an English muffin with hollandaise sauce
Peach French Toast with peach compote and candied walnuts
Brunch al fresco at Trailhead is a perfect start to the day!
Steak Benedict: two eggs poached, grilled steak, sauteed mushrooms, asparagus, crispy shallots and hollandaise sauce
There’s so much to do at Pronghorn, including TWO world class golf courses.
Since we’re not golfers, we spent our play time on the bikes and scooters the resort has on site
It’s also a lovely place to just relax.
They have a full service spa here so you can embrace full relaxation mode. We both had a massage our first day here and it was heavenly.
Fresh fruit, cheese and chocolate covered strawberries from the spa menu.

We enjoyed a lovely dinner at Cascada, their more upscale and newly renovated restaurant on site.
Avocado and Tomatillo Gazpacho with compressed summer melon.
Beautiful baby greens and summer vegetable salad.
Summer Vegetable Risotto
Wild Boar Tenderloin with braised local mushrooms, sunchokes, tarragon creme and pickled scapes.
Sorbet Flight and Fig Bread Pudding for dessert.
Poolside cabanas at the adults only pool are perfect for lounging the afternoon away.
We loved taking in sunsets here at the adults only pool and hot tub and couldn’t believe we had it all to ourselves the first night we were here.
Don’t worry if you’re traveling with with little ones – there are two family friendly pools (and hot tubs).
