TMACS is Chef-Driven and Spectacular

Located in the lovely Showroom on Colville in downtown Walla Walla, TMACS is a true gem. The brainchild of third-generation Walla Walla native Tom Maccarone, TMACS is an evolution of his first restaurant, T. Maccarone’s, which was inspired by his mother’s kitchen and imbued with their Italian heritage. The restaurant moved and changed names in 2019, and the TMACS we know now and love was born.

TMACS is a place where you can sip a fine craft cocktail, explore a superb wine list, and sample delicious seasonal creations from Chef Jose Meza. Chef Meza, who managed the kitchen at T. Maccarone’s for over 9 years was welcomed as a partner at TMACS in 2020. If you get a moment to talk to Jose, you will instantly pick up on his love for food and what he does. He and his team are committed to the community and local ingredients, and he is frequently putting new things on the menu.

The cocktails here are absolutely stunning (and just as delicious). I love the eclectic glassware (many of which were Tom’s grandmother’s).

On the left – the Grapefruit + Hibiscus Margarita: tequila, fresh grapefruit, lime, Aranciata, and Caprasso Apertivo.

On the right – the Earl Sour: rum, egg white, earl grey syrup, and lavender bitters.

Such a stunner!

The space is warm, modern, and absolutely stunning.

New on the menu for spring is this bright ahi tuna salad. The ahi is coated with harissa, seared and served with plantain chips, avocado, and a mango salsa. I will be eating this all spring and summer long!

Did you know that TMACS is the only restaurant in Walla Walla pouring Abeja? Drink up, y’all.

Crispy Duck with baby beets, lentils, carrot puree, watercress pesto and a date glaze make up this stellar dish that I absolutely could not stop eating.

Don’t skip dessert, y’all. The huckleberry cheesecake is sinful.

Warmer days mean that patio season is (finally!) upon us. Don’t miss the fabulous patio at TMACS!

TMACS is open for takeout, dine-in and patio dining (weather permitting); make your reservation here. And don’t miss their beautifully curated gift shop next door, TMACS Epicurean Kitchen. It’s filled with the most delicious things, like imported cheeses, duck fat in a can, and high-end olive oils and hot sauces (swoon).
