Can you imagine opening a bar in a pandemic? That’s what Chef Shota Nakajima and the team at Taku did just days before all bars and restaurants in Seattle were ordered to close and a stay at home order was issued. His simple but original and delicious concept for Taku with Osaka style street food had been in the works for years and the build out taking place for many months before the Grand Opening March 11th. Now, one month later, he and his team have had to completely rebuild and reposition Taku to a takeout window offering to go cocktail kits, kushi katsu and other Japanese comfort food. The menu is quite delicious (rice bowls, lots of fried food and a katsu burger). I’ve been lucky enough to try a few dishes (and I’ve photographed almost all of them).
