Fried Oyster/Maitake Mushroom Puree with Apple Chips
Fall is in full swing in Seattle and Chef Shota Nakajima and his team at Adana are serving up seasonally inspired mini masterpieces on their tasting and a la carte menus. The plates are always visually stunning and super creative in this Japanese comfort food, fine dining restaurant in the Capitol Hill neighborhood of Seattle. I had the pleasure of stopping by yesterday to sample a few of the fall dishes and it was an intensely delicious experience, starting with the mushroom dish above and it was true seasonal perfection. This dish is available both on the November tasting menu and on the a la carte menu in the bar.
Shitake Mushroom, Shrimp Paste, Sesame Seed
The commitment to local, seasonal ingredients is palpable at Adana, and their menu changes monthly to reflect what’s available regionally from Pacific Northwest farmers. At Adana you may dine a la carte or order the tasting menu which is three courses for $37. These Shitake Mushrooms with Shrimp Paste have been a favorite featured on the October tasting menu.
White Fish, Persimmon Puree, Ponzu Onion
The classic black cod is grilled and placed atop of a persimmon kabocha puree in this beautiful fall dish, available on the November tasting menu. Compressed ponzu onions and sautéed chanterelles are added and the dish is finished with persimmons that have been tossed in a touch of plum wine and mustard frill.
Chicken with Potato, Swiss Chard, Leek, Soy
These little fried chicken wings were a thing of pure delight for the southern girl in me. Crispy skin yet moist chicken and creamy mashed potatoes are the things that my dreams are made of. This dish can be ordered as a part of the November tasting menu at Adana or a la carte in the bar.
Dining at Adana is an elegant and exciting culinary adventure where the menu is constantly evolving and Chef Shota and his team continue to produce unique, innovative and inspired dishes.
